Plum Apricot Salsa

Here's a fruity salsa, sure to add some color to your next gathering, Plum Apricot Salsa! I created this a couple of summers back, when I wanted something light for lunch and didn't want to coo

k. I used what was in my fridge and it ended up being a big hit! This is great as a dip, or on Tempeh, Tofu or Fish!


Plum Apricot Salsa

Serves 4

  • 2 Tomatoes, (try two different colored ones if possible
) chopped

  • 2 Plums
, chopped

  • 2 Apricots
, chopped

  • 1 Red or Green pepper
, chopped

  • 1 Scallion
, chopped

  • 1 Tbsp of Ginger, chopped

  • Salt and Pepper to taste


    This can be made two ways, to make it super chunky, mix all ingredients together in a bowl and serve, or pulse in a food processor.
