Peanut Butter Chia Pudding


 Here's a wonderful treat for tonight and this weekend, that will leave you energized instead of sleepy after your sugar high. I was recently introduced to the lovely Organic Raw Honey Company, Wedderspoon. They make lots of yummy Raw Honeys as well as lots of wonderful natural products. You can find out more here.


 Peanut Butter Chia Pudding  


¾ cup chia seeds

3 tablespoons of natural peanut butter

3 tablespoons Wedderspoon raw honey (Beechwood or Manuka will work) 

3 ¼ cups almond milk

1. Whisk the peanut butter and honey together in a medium bowl. Slowly whisk in almond milk. Once the ingredients are mixed well, stir in chia seeds.

2. Let the chia mixture sit for 15 minutes, stirring every 5 minutes or so. Cover and place in the fridge for an hour.

3. Take out and serve. If it becomes too thick after chilling in the fridge, stir in a little more almond milk.
