Power Breakfast: Raw Granola + PB Banana Maca Smoothie

I wouldn't say that I'm exactly a morning person, I tend to go with the seasons. It's easier for me to wake up early with the sun in the Spring, Summer and early Fall, whereas the Winter can be difficult! (Haha) No matter what time of day or the season, I always love breakfast! Here's a wonderful power house breakfast that'll definitely keep you satisfied till lunch. Planning a weekend getaway? They both travel well and a big batch of the granola can be made ahead of time and brought with you. (No more scary continental breakfasts!)

 

Raw Buckwheat Granola (Yields about 3 cups)

Buckwheat is a great alternative for people with wheat sensitivities. Flaxseed is high in Omega-3 fatty acids and fiber. Coconut oil is also a heart healthy fat, to help keep you full and pumpkin seeds help your libido.

  • 1 cup soaked buckwheat

  • 2 tbsp flax seeds

  • 1/3 cup sunflower seeds

  • 1/3 cup pumpkin seeds

  • 1/3 cup dried cranberries

  • 1/3 cup maple syrup  

  • 1 tbsp melted coconut oil

  • 2 tbsp water

  • 1 tsp cinnamon

  • Dash nutmeg

  • Dash salt

  1. Mix all the dry ingredients together in a large bowl.

  2. Whisk together the maple syrup, water, coconut oil, cinnamon, nutmeg, and salt.

  3. Pour over dry ingredients and mix them well with your hands.

  4. Dehydrate* at 105 degrees for 12 hours. 

  5. Serve with your favorite non dairy milk and some fresh fruit on top.

 

*If you don't have a dehydrator, you can also bake this recipe at 350 degrees until it has started to get toasty, about 30-40 minutes. Let cool for an additional 10 minutes out of the oven.

 

PB Banana Maca Smoothie (Serves 2)

I'm a huge sucker for anything with Bananas and Peanut Butter so needless to say, this is my go to smoothie. Bananas are high in potassium and (natural) Peanut Butter is high in protein. Notice I said natural Peanut Butter. If you're using anything else, the sugar and preservatives are negating all the good stuff. There should only be 2 ingredients in your Peanut Butter; Peanuts and Oil. (Find out how to make your own Peanut Butter here) Last but not least, Maca is rich in vitamins B, C and E. It's high in calcium, zinc and iron. It's a known libido booster as well. ;) 

  • 3 Bananas

  • 1-2 heaping tablespoons of natural Peanut Butter 

  • 2 cups of almond milk

  • 1 teaspoon maca powder

  1. Place all ingredients in a blender and blend until smooth.

  2. Divide between 2 glasses and enjoy!
