Going to the farmers market is one of my favorite things to do. Even if I'm just looking around. Taking in all the lush and colorful fruits and veggies leaves me so inspired! This past week here in NYC they had a special night market, where the vendors stayed open later. Here are some shots from this week.
Here's a recipe using ingredients from the farmers market. It's perfect for hot nights like we're having right now in NYC. (The heat breaks tomorrow)
Avocado Palm Salad w/ Lemon Zest Dressing
(serves 2 as an entree, 4 as a starter)
4 cups of your favorite greens (Kale, Mixed Greens)
1 avocado, cut into 1 inch pieces
1/2 can of hearts of palm, rinsed , drained and cut into 1 inch pieces
1 cup of cilantro, lightly chopped
Separate greens between two big plates. Add avocado and hearts of palm on top of each plate. Garnish with Cilantro and add dressing on top.
1 cup of veganaise
1 Tbsp of Lemon zest
Juice from one lemon
1 tsp of evoo
Put Veganaise, juice and Evoo into a bowl and wisk until well combined. Add Zest and blend until well combined. Store in a small container until ready to use.
