Here are a couple of healthy recipes sure to please at your next picnic, bbq or day at the beach.
1 pineapple (save some pieces for garnish)
2 cups coconut water
1/2- 1 cup of sliced Mango
Cinnamon to taste
Put everything in a blender, and process until blended well.
Pour into glasses and garnish with Pineapple.
Asian Chiken Salad Wraps
3-6 romaine leaves* (washed well)
1 package of cooked Quorn Naked Chiken or Soy Chiken from the Asian Super Market Chopped into bite size pieces.
1/2-1 cup of Veganaise
1/2 bunch of mint, chopped
1 handful of purple grapes, chopped
1 handful of chopped peanuts or almonds
S&P to taste
Place Chiken, Veganaise and S &P in a bowl and stir until starting to combine. Add in Mint, Grapes and nuts and combine well.
Divide Romaine Leaves between plates and add one scoop of Chiken Salad onto each leaf. Hold like a taco and enjoy!
*You can use Endive Leaves in place of the Romaine Leaves for more of an appetizer.
