Here's a wonderful treat for tonight and this weekend, that will leave you energized instead of sleepy after your sugar high. Peanut Butter Chia Pudding
¾ cup chia seeds
3 tablespoons of natural peanut butter
3 tablespoons Wedderspoon raw honey (Beechwood or Manuka will work)
3 ¼ cups almond milk
1. Whisk the peanut butter and honey together in a medium bowl. Slowly whisk in almond milk. Once the ingredients are mixed well, stir in chia seeds.
2. Let the chia mixture sit for 15 minutes, stirring every 5 minutes or so. Cover and place in the fridge for an hour.
3. Take out and serve. If it becomes too thick after chilling in the fridge, stir in a little more almond milk.
